Greek-style Smash Tacos

Ingredients:

FETA TZATZIKI

3 heaped Tbsp Greek yogurt

10cm cucumber, finely grated and squeezed with paper towels to remove excess water

50g feta, mashed with a fork

Juice of 1/2 a small lime

10 mint leaves, finely sliced

SMASH PATTIES

400-500g beef or lamb mince

2 tsp paprika

2 tsp cumin

2 tsp dried mixed herbs

8 small low carb tortillas  

2 tomatoes, diced

8 leaves of iceberg lettuce, shredded

1 small red onion, sliced

Other half of lime cut into wedges, to serve

Directions: 

  1. Add all ingredients for the Feta Tzatziki to a small bowl, season with salt and pepper and mix to combine. Set aside.

  2. Add all ingredients for the Smash Patties to a bowl, add salt and pepper and mix to combine. Separate into 8 serves.

  3. Transfer each smash patty onto a low carb tortilla by pressing the mince into a thin layer that fully covers the tortilla.

  4. Heat a pan over high heat and add a drizzle of olive oil. Cook each tortilla mince side-down for approximately one minute, pressing with a spatula to ‘smash’ the tacos and ensure the mince layer covers most of the tortilla. Flip once the mince has browned and brown the other side of the tortilla for about 30 seconds. Repeat with each one.

  5. Assemble tacos with lettuce, tomato, onion and tzatziki and a wedge of lime.
